Pork and squash wrapped up in foil bundles and baked to perfection!
Yield: 2 servings

2 | center cut bone in pork chops, 1- inch thick | ||

2 | sheets | heavy duty aluminum foil (18 x 12- inch) | |

Salt to taste | |||

Pepper | |||
|

1 | acorn squash, cut in half | ||
|
|||
2 | Tablespoons | brown sugar | |
|
|||
2 | Tablespoons | honey | |
|
|||
2 | Tablespoons | butter | |
|
|||
2 | cups | mixed greens | |
|
Preheat oven to 400 degrees F
Place chop on an 18x12- inch piece of heavy duty aluminum foil. Season with salt and pepper.
Fill the hollow of each squash half with 1 tbsp brown sugar, 1 tbsp honey and 1 tbsp butter. Place squash on top of pork chop with the cut side up.
Wrap tightly in foil. Place on baking sheet. Bake about 1 hour until center of chop registers 145 degrees on a meat thermometer and then rests for 3 minutes.
Divide mixed greens onto two plates. Add chops and squash side by side; discard foil.
